Zucchini Crust Pizza


Zucchini Crust:
2 1/2 cups Jersey Fresh zucchini, grated then liquid removed (squeezed dry and rest on paper towels)
2 large Jersey Fresh eggs, lightly beaten
1/2 cup flour
1 1/2 tsp salt
1/2 cup parmesan cheese, grated
1/2 cup mozzarella cheese, shredded

1/2 cup Jersey Fresh pizza sauce (we used Don Pepino Pizza Sauce)
1 cup mozzarella cheese, shredded
Your favorite toppings such as pepperoni, sliced olives, mushrooms, peppers
1 tsp dried oregano
Jersey Fresh basil, chopped (for garnish)

1. Preheat oven to 450 degrees. In a large mixing bowl, combine zucchini, eggs, flour and salt. Add parmesan and mozzarella cheese and mix until incorporated. On a 12-inch pizza dish, spread the zucchini crust. Bake for 15 minutes or until golden brown and set.
2. Remove the crust from the oven and reduce the oven to 400 degrees. Top the crust with sauce, cheese and toppings. Sprinkle with oregano and bake for 10-13 minutes more until cheese is melted and bubbly.
3. Garnish with basil, if desired.
