Sweet Potato Fries with Horseradish Dipping Sauce


2lb Jersey Fresh Sweet Potatoes
2 TB Olive Oil
1/8 tsp salt
1/8 tsp pepper
1/8 tsp garlic powder
1/2 c mayo
1/2 c sour cream
2 TB horseradish (less or more to your taste)


15m prep time / 35m cook time

1. Preheat oven to 450 degrees
2. Spray a baking sheet or line with parchment paper
3. In a bowl, combine oil, salt, pepper and garlic powder
4. Peel your Jersey Fresh sweet potatoes (or scrub really well if you prefer to keep skins on)
5. Cut into 1/4" fries
6. Toss fries with olive oil and spices
7. Spread fries on baking sheet
8. Bake for 30-35 minutes, turning occasionally until browned
9. While fries cook, make horseradish dip: in a small bowl, mix mayo, sour cream and horseradish (refrigerate until ready to serve)
