Stuffed Sweet Pepper
1 Jersey Fresh Fryer Peppers
4 oz ground sausage
1 c. cooked risotto (or rice)
2 oz. butter (melted)
1 oz. shredded Romano or mozzarella cheese
Pinch of salt and pepper
FOR THE SAUCE:
1 Jersey Fresh tomato, diced
1 TB Jersey Fresh basil, sliced
1 TB Jersey Fresh garlic, chopped
2 TB olive oil
Salt and pepper to taste

2. Prepare the pepper by either grilling it lightly on all sides or by blanching in boiling water for two minutes. Let cool, cut in half, and clean out all seeds.
3. Stuff the pepper with the sausage mixture and roast in the oven for 10-15 minutes at 350°.
4. Meanwhile, prepare the tomato sauce. Slice the tomato in ¼” slices and then chop. Heat the olive oil in the pan. When hot, add the chopped tomato, basil, garlic, salt and pepper. Lower the heat to a simmer and cook down the sauce to the desired consistency.
5. To serve, divide the sauce on two plates, place the peppers on top of the sauce and garnish with your favorite shredded cheese.
