Sesame-Citrus Roasted Beet Salad

Ingredients

8 small Jersey Fresh beets (Golden and Chioggia beets are recommended for their mild flavor)
¼ cup Jersey Fresh chives
1 tsp sesame oil
1½ TB ponzu sauce
sesame seeds

Steps

10m prep time / 60m cook time

1. Preheat oven to 425 degrees.
2. Wrap beets in foil. Place on a baking sheet; bake until beets are slightly soft to the touch, 45 minutes to 1 hour depending on their size.
3. Cool beets in packets, then rub off skins.
4. Slice beets into wedges.
5. Mix beets, chives, sesame oil, and ponzu sauce in a bowl.
6. Garnish with sesame seeds.

Delicious warm or chilled.
