Savory Caramelized Sweet Potatoes

Ingredients

5 to 6 peeled and cubed Jersey Fresh sweet potatoes (about 2″” cubes)
6 Tablespoons of butter, melted
1/4 cup of light brown sugar
1 teaspoon of kosher salt 1 teaspoon of fresh ground black pepper

Steps

15m prep time / 40m cook time

1. Preheat oven to 400 degrees
2. Toss the sweet potatoes with the blended butter, brown sugar, salt & pepper
3. Spread in a single layer on a baking sheet. Roast for 35 to 40 minutes until the potatoes are tender and the glaze begins to caramelize
4. Turn the potatoes while roasting a few times with spatula to be sure they brown evenly
