Ingredients
2 TB vegetable oil
1 large Jersey Fresh onion, thinly sliced
2 TB unsalted butter
2 Jersey Fresh Granny Smith apples, cubed 1/2-inch cubes
1 tsp sugar
4 oz cheese, grated, such as fontina, gruyere or sharp cheddar
2 TB Jersey Fresh chives, minced
1/2 tsp dried thyme
1 lb package frozen puff pastry, thawed
1 egg, beaten
Steps

1. Preheat the oven to 400 degrees. Line 2 baking sheet with parchment paper or silicone baking mats
2. In a large pan, heat the oil and add the onions and 1 tsp of salt. Cook until caramelized, about 30 minutes. Remove to a large bowl
3. In the same pan, melt the butter and add the apples and sugar. Cook until softened, about 10 minutes. Remove from heat and add to the bowl of onions
4. Add the cheese, chives and thyme. Add salt and pepper, to taste. Stir to combine
5. Cut the puff pastry into 2-inch squares and place them on the baking sheets
6. Brush each square with the beaten egg
7. Using a tablespoon, place filling in the middle of each puff pastry
8. Bake for 25 minutes, rotating the pans halfway through and switching the baking sheet on the top rack to the bottom and the bottom rack to the top, until the pastry is golden brown
