Romaine & Broccoli Crunch Salad

Ingredients

1 cup walnuts, chopped
1 (3 oz) package of ramen noodles, uncooked and chopped
4 TB butter
1 bunch Jersey Fresh broccoli, chopped
1 head Jersey Fresh romaine, chopped

Dressing:
1/2 cup vegetable oil
1/2 cup sugar
1/4 cup red wine vinegar
1 1/2 tsp soy sauce
1/2 salt
1/4 pepper

Steps

10m prep time / 10m cook time

1. In a skillet, melt butter. Add walnuts and ramen. Cook on medium-low heat until brown. Cool on paper towel.
2. In a saucepan over medium-low heat, combine red wine vinegar and sugar. Cook until sugar dissolves. Remove from heat and let cool.
3. In a large bowl, combine romaine, broccoli and the ramen / walnut mixture.
4. Whisk the soy sauce, vegetable oil, salt and pepper into the vinegar and sugar mixture. Pour dressing over other ingredients and toss.
