1 (6 oz) package of sliced prosciutto
2 TB of extra virgin olive oil
Cracked black pepper
2 TB chopped Jersey Fresh thyme
Sriracha aioli or your favorite dipping sauce
15m prep time / 15m cook time
2. Toss the zucchini wedges with the olive oil, pepper and thyme
3. Wrap a piece of prosciutto around each of the zucchini
4. Place the zucchini on a sheet pan that has been spritzed with olive oil spray and bake for 15 minutes or until the prosciutto is crisp and the zucchini tender. Turn the zucchini half way through cooking time
5. Serve with lemon wedges and sriracha aioli or your favorite dipping sauce.
NOTE: This recipe could also be prepared on the grill! No need to heat the oven on hot days.
