Ingredients
2-3 Jersey Fresh peaches, cut into ½ inch wedges
4 slices prosciutto
2 cups Jersey Fresh arugula
1 cup parmesan cheese shavings
2 lemons, juiced
½ cup extra virgin olive oil
¼ tsp kosher salt
Cracked black pepper
Steps
1. In a large bowl place 2 cups arugula. Add cut peach wedges to the arugula.
2. In a small separate bowl or measuring cup, mix together the juiced lemons, olive oil, salt & black pepper. Taste for seasoning.
3. Drizzle over the desired amount of dressing onto the arugula and peaches and gently toss to combine.
4. Plating is essential here, distribute the arugula and peach wedges evenly onto each of the 4 plates and drape a prosciutto slice over each salad. Top with shaved parmesan cheese and more cracked black pepper if desired.
