Peach Dumplings


2 Jersey Fresh peaches, peeled, cut in 1/2 and pitted (should be almost ripe)
1 refrigerated pie crust, softened as directed
2 TB butter, softened
6 TB brown sugar
1/2 tsp cinnamon
1 egg white, slightly beaten
2 tsp sugar


20m prep time / 25m cook time

1. Preheat oven to 400 degrees
2. Mix together the butter, brown sugar and cinnamon in a small bowl then divide the mixture between the 4 peach centers
3. Roll out the pie crust with a little flour. Cut into quarters. Set 1 peach half, cut side up on each crust quarter
4. Brush edges with egg white then pull the dough up over the peach and twist or pinch together
5. Place on a greased baking sheet or dish. Brush the dough with egg whites and sprinkle with sugar
6. Make small slits in top to allow steam to escape
7. Bake for 25-30 minutes or until brown
8. Cool 15 minutes before serving

Serve with warm caramel sauce or vanilla ice cream if desired
