Ingredients
1 head of Jersey Fresh romaine lettuce
1 quart of Jersey Fresh spring mix
3 Jersey Fresh peaches, sliced
1 cup gorgonzola cheese, crumbled
1/3 cup pine nuts, toasted
LEMON VINAIGRETTE
1/4 tsp salt
2 TB white vinegar
2 TB fresh lemon juice
4 1/2 TB extra virgin olive oil
freshly ground black pepper
1/2 tsp dijon mustard
2 tsp water
2 TB water
3 TB Jersey Fresh parsley, snipped

1. Make vinaigrette in a medium mixing bowl. Whisk together salt, vinegar and lemon juice. Add remaining ingredients and whisk to thicken slightly. Set aside
2. Tear the lettuce into large pieces. Scatter lettuce pieces onto a large platter then scatter spring mix over the lettuce
3. Tuck the peach slices into the greens
4. Sprinkle with the gorgonzola and pine nuts
5. Drizzle with the vinaigrette
