Pan Seared Salmon with Beet Pesto and Greens

Ingredients

8 (2 oz) salmon fillet slices
2 TB olive oil, divided
2 bunches Jersey Fresh beet greens
1 TB Jersey Fresh garlic, chopped & divided
¼ c Jersey Fresh onions, diced
2 Large Jersey Fresh Beets (roasted in a 300 degree oven for 45-55 minutes or until tender)
1 TB pine nuts
2 TB parmesan, shredded

Steps

1. Chop one of the roasted beets. Slice the other, for garnish. In a food processor, place the 1 chopped roasted beet with pine nuts, parmesan and 1 TB olive oil. Pulse until smooth and set aside.
2. Heat a large sauté pan over medium high heat. Add 1 TB olive oil and sear the salmon for 2 minutes on each side until cooked through (make sure to not overcrowd the pan, you may need to cook the salmon in 2 batches). Remove salmon and set aside.
3. To the warm pan, add onions and 1 TB garlic and cook until onions are translucent. Add the beet greens and sauté for 5 minutes or until tender.
4. Divide the greens onto the center of 4 plates and top each with 2 pieces of salmon. Place a dollop of the pesto on the salmon.
5. Garnish with the sliced beets and serve.
