Pan Roasted Sweet Corn


2 ½ cups Jersey Fresh corn, cut off the cob
2 TB vegetable oil
Kosher salt & Pepper to taste


1. Using a cast iron or heavy bottomed large skillet, turn the heat to high and let the pan get smoky!
2. Add in the corn making sure it is in one layer in the pan, if it doesn’t fit cook it in 2 batches.
3. Do not shake the pan or turn the corn for the first one to two minutes after adding in to allow caramelization.
4. Toss the corn kernels in the pan or stir and continue to brown over high heat for another 3 minutes.
5. Season and remove from heat. Serve as is or use as a garnish for salads, pastas, soup, tacos, and more!
