Marinated Cherry Tomatoes on Avocado Toast


4 slices sourdough bread
2 cups of Jersey Fresh cherry tomatoes, sliced in half
1 Jersey Fresh shallot, diced
¼ cup Jersey Fresh parsley (or cilantro)
2 avocados, sliced
1 TB olive oil
1/2 TB champagne vinegar
1 small clove of Jersey Fresh garlic, minced
Salt & pepper to taste
Pinch cayenne, optional


1. Slice the cherry tomatoes in half and chop up the parsley (or cilantro) and add to a bowl.
2. Whisk together dressing ingredients – olive oil, balsamic vinegar, minced garlic, black pepper and 1 pinch of salt. Pour over cherry tomatoes. Stir to combine and set aside.
3. Toast bread slices. Put the toasted slices of bread on a serving platter.
4. Spread slices of avocado on toast. Pat it down with a fork or spoon as added. Sprinkle a pinch of salt over the avocado mixture on the bread.
5. Spoon the marinated tomatoes on top of the avocado toast.
