Mac and Cheese Stuffed Jersey Tomatoes


3-4 medium Jersey Fresh tomatoes
1 cup of mac and cheese (we used leftover mac an cheese to make this recipe super simple)
2 TB Italian breadcrumbs
2 TB shaved parmesan cheese
Jersey Fresh parsley, chopped (as garnish)


20m prep time / 20m cook time

1. Hull out the center of each tomato. Let rest upside down for a couple minutes to drain.
2. Fill each one with mac and cheese.
3. Combine the breadcrumbs and parmesan cheese. Sprinkle on top of the mac and cheese.
4. Place the tomatoes in a small, oven-safe dish.
5. Bake at 350 for 18-20 minutes.
6. Sprinkle with parsley.
