Leeks Baked in Cream


6 large Jersey Fresh leeks, green parts removed
2 cups heavy cream
1 cup Pecorino Romano
1/2 cup parmesan
1/4 tsp sea salt
freshly ground black pepper


25m prep time / 95m cook time

1. Heat oven to 425 degrees
2. Cut leeks crosswise into 1 inch tall rounds
3. Drop leeks into bath of water, let soak for 10 minutes. Drain on paper towels
4. In a bowl, combine 2 types of cheese. Reserve 1/2 cup
5. Add cream and salt and pepper to bowl. Whisk together
6. Pour a small amount of cream and cheese mixture into bottom of baking dish, enough to coat
7. Transfer leeks to baking dish, cut sides up. Pour remaining cream and cheese mixture over leeks. Cover with foil and bake 60 minutes
8. Remove foil, sprinkle with remaining cheese. Bake another 20 minutes or until leeks are tender and browned
9. Let sit for 10-15 minutes before serving
