Jersey Fresh Mexican Corn Salad


2 TB vegetable oil
About 3-4 cups of Jersey Fresh corn kernels (cut from 5 ears of shucked Jersey Fresh corn)
2 TB mayo or Mexican crema
3 oz feta cheese or cotija cheese, crumbled
1/2 cup Jersey Fresh scallions, sliced
1/2 cup Jersey Fresh cilantro, chopped
1 Jersey Fresh jalapeno, seeded and diced
2 cloves of Jersey Fresh garlic, minced
Juice of one lime
Chili powder and salt, to taste


10m prep time / 15m cook time

1. Using a bundt pan, place each ear of corn in the center and carefully cut off kernels
2. In a cast iron pan, heat oil over high. Add corn kernels. Season with salt to taste. Stir for about 15 minutes or until the corn starts to brown
3. Transfer corn to a bowl and add mayo/crema, feta/cotija, scallions, cilantro, jalapeno, garlic, lime juice, salt & chili powder
4. Stir to combine (can be served immediately or once cooled)
