Jersey Fresh Apple Pie Caramel Apples

Ingredients

4 Jersey Fresh Courtland or Granny Smith apples
4 cake pop sticks or popsicle sticks
1 (11oz) package of soft caramel squares, unwrapped
3 TB heavy cream
6 regular or cinnamon graham crackers, made into crumbs
12 oz vanilla candy coating or white chocolate melting wafers
Cinnamon sugar mixture, in shaker (to make your own combine 2 TB sugar with 1/2 tsp cinnamon)

Steps

1. Wash and scrub apples under hot water to remove any wax coating. Dry completely and insert stick into the top of each apple
2. Line a baking sheet with wax paper and spray with non-stick cooking spray
3. Melt caramel squares and cream in microwave at 50% for 2 minutes. Remove and stir. Repeat for another 2 minutes on 50%, stir. Repeat until caramel is melted
4. Dip each apple into the melted caramel, scrapping excess caramel from bottom of apple. Place on baking sheet. Refrigerate for 1 hour
5. Make graham cracker crumbs with plastic bag and kitchen mallet or in a food processor. Transfer to a bowl
6. Melt the vanilla candy coating in microwave at 50% for 2 minutes. Remove and stir. Repeat for another 2 minutes on 50%, stir. Repeat until candy is melted
7. Dip each caramel apple into candy coating, scrapping excess candy from bottom of apple
8. Immediately sprinkle with a lots of cinnamon sugar mixture
9. Allow to sit for a few minutes then dip the bottom of each apple into the graham cracker crumbs
10. Set apples back on wax paper and allow to set completely
