Grilled Peaches with Ice Cream & Pomegranate Molasses


4 ripe Jersey Fresh peaches
2 TB grapeseed or vegetable oil
4-8 scoops vanilla ice cream
¼ cup Pomegranate molasses


1. Heat your grill or grill pan to high heat.
2. Cut each peach in half and remove pit, leaving skin on.
3. Drizzle the grapeseed oil over the cut flesh side of the peach and distribute evenly.
4. Place the cut side of the peach onto the grill. Let the peach sizzle & sear and do not move it, cook for 2-3 minutes and then using tongs or a spatula lift and turn it a quarter of the way to create a grill mark. 5. Continue to cook for 2 more minutes or depending on the ripeness, remove when done.
6. Serve 2 halves of a peach topped with vanilla ice cream & drizzled with pomegranate molasses (a good substitute would be reduced balsamic vinegar).
