Fresh Pea Crostini


12 slices of French baguette, sliced about 1/4 inch thick
3 TB extra virgin olive oil, divided (or more as needed)
1 cup fresh Jersey Fresh peas, shelled
1 Jersey Fresh garlic clove, peeled and cut in half
8 Jersey Fresh mint leaves, diced
1 lemon, zest only
1/2 cup ricotta cheese
salt & pepper, to taste


20m prep time / 7m cook time

1. Preheat oven to 340 degrees and line a baking sheet with parchment paper
2. Place slices of bread on the baking sheet and lightly brush with olive oil
3. Bake until crisp and golden about 6-7 minutes
4. While bread is baking, bring a small pot of water to boil and blanch peas for 1 minute or until tender. Drain and rinse under cold water right away to preserve bright green color. Drain
5. Remove bread from oven and rub each slice with the garlic clove halves. Discard cloves. Let slices cool
6. Mix ricotta with zest and mint
7. Mix peas with oil, salt and pepper, to taste
8. Spread a layer of ricotta mixture on top of each slice of bread and top with pea mixture
9. OPTIONAL: you can top with a drizzle of olive oil or sprinkle with finishing salt or extra lemon zest or ALL!
10. Serve immediately
