Broccoli Breakfast Bites

Ingredients

2 TB butter, softened OR cooking spray
8 Jersey Fresh eggs
5 TB heavy cream
2 cups quinoa
1/5 cups sharp cheddar cheese, shredded
1 cup Jersey Fresh broccoli, chopped
4 TB Jersey Fresh scallion, diced
1 tsp garlic salt

Steps

15m prep time / 20m cook time

1. Preheat the oven to 375 degrees. Coat muffin cups with butter or cooking spray
2. In a large bowl, add eggs and cream and whisk together. Add quinoa, cheese, broccoli, scallions and garlic salt and mix until combined
3. Using a 1/4 cup measuring cup, divide entire mixture evenly into muffin cups
4. Bake for 20 minutes or until golden brown
5. Let stand 5 minutes before removing from muffin tin
