Blueberry Pizza

Ingredients

1 tsp Olive Oil
1 cup Jersey Fresh onion, thinly sliced
Pinch of Kosher salt
Pinch of red pepper flakes
2 TB Jersey Fresh honey
1/2 cup local, ricotta cheese
4 oz cup local, goat cheese
2 storemade pizza crusts (we used Stonefire Flatbread Pizzas)
1 cup Jersey Fresh blueberries
1/2 cup Jersey Fresh arugula

Steps

5m prep time / 20m cook time

1. Preheat the oven to 425 (or if using a different pizza crust follow those specific directions).
2. In a medium pan, heat the oil on low heat. Add the onion, salt and red pepper flakes. Cook onions until they wilt, about 3-5 minutes. Then stir in the honey. Let the onions caramelize then remove from heat.
3. Stir the ricotta and goat cheese in a small bowl. Spread half the cheese mixture over one pizza crust, top with half of the caramelized onions and half of the blueberries. Repeat for second crust.
4. Carefully place pizzas in the oven directly onto the rack. Bake for about 6-7 minutes (or according to your pizza crust directions) and until the blueberries are about to burst and cheese is soft.
5. Remove from oven and sprinkle with arugula.
