Blueberry Hill Muffins


2 cups flour
1 tsp baking powder
¼ tsp salt
½ tsp baking soda
½ cup unsalted butter (1 stick)
1 cup sugar
2 Jersey Fresh eggs
1 tsp vanilla
1 cup sour cream
1 to 1½ cups Jersey Fresh blueberries


20m prep time / 25m cook time

1. Sift flour, baking powder, salt and baking soda
2. Cream butter and sugar well
3. Add eggs and beat until smooth
4. Mix in vanilla and sour cream
5. Add sifted dry ingredients and blend
6. Add blueberries gently
7. Line muffin tins with paper liners or grease and flour tins (video uses baking spray with flour)
8. Bake at 375 degrees for 25 – 30 minutes. Bake mini muffins for 18 minutes
