Basil Spinach Dip


Zucchini Fries
2 medium Jersey Fresh zucchini, unpeeled, cut into sticks
1 TB Kosher salt
2 Jersey Fresh eggs
1/2 cup panko bread crumbs
1/2 cup italian bread crumbs
1/2 cup Parmesan cheese
1/2 tsp garlic powder
1 TB Italian seasoning

1 TB butter
1 sweet onion, peeled and sliced
1 cup mayo
2 TB cider vinegar
2 TB Jersey Fresh honey
1 TB mustard
pepper, to taste


20m prep time / 0m cook time

1. Place spinach, garlic, cheese, shallot and basil in food processor with steel blade. Process to a paste.
2. Add cottage cheese and oil. Process until smooth.
3. Add milk if desired, to adjust the consistency.

Makes a great low-fat dip or spread for crudite or crackers. Best when made a day ahead, if possible.
