Baked Zucchini Fries with Sweet Onion Dip


Zucchini Fries
2 medium Jersey Fresh zucchini, unpeeled, cut into sticks
1 TB Kosher salt
2 Jersey Fresh eggs
1/2 cup panko bread crumbs
1/2 cup italian bread crumbs
1/2 cup Parmesan cheese
1/2 tsp garlic powder
1 TB Italian seasoning

1 TB butter
1 sweet onion, peeled and sliced
1 cup mayo
2 TB cider vinegar
2 TB Jersey Fresh honey
1 TB mustard
pepper, to taste


55m prep time / 50m cook time

1. Place the zucchini fries in a colander in the sink or over a bowl and sprinkle with Kosher salt. Let drain for 1/2 hour or more.
2. While zucchini is draining, make the dip: Melt butter in frying pan over medium heat, add sliced onion. Cook, stirring constantly, until onions soften and brown
3. Once brown, transfer onions to the food processor and let cool
4. Add the mayo, cider vinegar, mustard, honey and pepper
5. Refrigerate the dip until you are ready to serve it
6. Make the zucchini fries: Rinse and dry with paper towels
7. Preheat oven to 425 degrees
8. Line baking sheet with parchment paper and spray
9. Place 2 eggs in one pie plate, mix to make egg wash
10. Combine panko, Italian breadcrumbs, Parmesan cheese, garlic powder and Italian seasoning in second pie plate
11. Dredge a few zucchini fries at a time in the egg then in bread crumb mix. Place on baking sheet
12. Bake fries for 15 minutes, turn over and bake another 15 minutes or until brown and crispy
13. Serve immediately with sweet onion dip
