Asian Cucumber Salad

Ingredients

3 cups Jersey Fresh cucumbers, partially peeled, then cut lengthwise, seed and slice
1/4 cup Jersey Fresh red onion, thinly sliced
1/2 cup Jersey Fresh red bell pepper, chopped
2 TB soy sauce
1 TB rice vinegar
1 TB sesame oil
2 tsp Jersey Fresh honey
2 TB Jersey Fresh green onion, sliced
1 TB sesame seeds
1/8 tsp black pepper
Salt, to taste

Steps

1. Submerge the red onion in a bowl of ice water. Let them sit for at least ten minutes, stirring once or twice, before draining on paper towels. Set aside.
2. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, green onion, sesame seeds and pepper. Add salt to taste, if desired.
3. Combine the cucumbers, red peppers and onion in a large bowl.
4. Pour the dressing over the vegetables and mix to coat. Serve immediately.
