Ingredients
Salad:
1 medium Jersey Fresh purple cabbage, cored, finely shredded
4 Jersey Fresh Fuji apples, peeled, cored, julienne
2 large Jersey Fresh carrots, peeled, julienne
1 bunch Jersey Fresh scallions, thinly sliced
Dressing:
1/4 cup cider vinegar
1 cup mayonnaise
2 chipotle peppers in adobe, chopped
1/3 cup Jersey Fresh honey
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper

1. To prepare the salad ingredients: we used a mandoline to julienne the apples, carrots, and cabbage, but that can be done by hand. We sliced any difficult carrots and the scallions.
2. Make the dressing: in a small bowl, whisk together the vinegar, mayo, chopped chipotle peppers, honey, salt and pepper.
3. Make the salad: add the cabbage, apples, carrots and scallions to a big mixing bowl and combine using your hands. Pour the dressing over top, and using a spatula, lightly toss the dressing and salad ingredients.
Enjoy as a side or on pulled pork sandwiches.
