Chef Mark Smith is the Owner and Chef at The Tortilla Press in Collingswood and The Tortilla Press Cantina in Pennsauken. He works with his wife and business partner, Lydia, to run both locations. The Tortilla Press restaurants is not your run of the mill Mexican restaurants. They are Mexican “influenced” — and that makes them very different. Offering meats and accompanying side dishes familiar to the American palate, but seasoned with the clean, savory flavors of Mexican herbs and sauces. Jersey Fresh produce is integral to their menu. Working closely with South Jersey farms and farmers, Chef Mark has created a savory experience full of good flavors and good food. From May through November, you can also find them at the Collingswood Farmers Market, where the menu varies with the South Jersey growing season, plus Chef Mark offers tours of the market introducing tour participants to the farmers he works so closely with while explaining the varieties of amazing Jersey fruits and vegetables and why it is so important to source and buy local. The tour is followed by a private lunch for the tour group using ingredients sourced that day at the market! Call and request to be added to an upcoming tour – you won’t be disappointed!
